With the Italian fleur, we will be opening a restaurant with the freshest produce from Italy, vibrant & buzzy atmosphere with live DJs in the evening & weekend brunches as well as a Japanese restaurant with lots of cocktail choices

Primary Objective:

As the Head Sushi Chef, you will be the heart and soul of our sushi bar, working hand-in-hand with the Head Chef to elevate our menu to unprecedented heights. Your role is crucial in ensuring we deliver exceptional food quality, delight guests with innovative sushi creations, and achieve remarkable profitability. You will embody the spirit of AQUA London’s standards, infusing creativity and excellence into every dish we serve.

Key Responsibilities:

• Craft Excellence : Collaborate closely with the Head Chef to maintain and enhance the highest standards of sushi quality, preparation, and presentation. Your expertise will define the sushi bar’s signature style.
• Innovative Leadership : Supervise and inspire a talented team, ensuring every station is staffed with skilled professionals and equipped with top-notch supplies. Lead by example, setting the bar high for quality and efficiency.
• Menu Mastery : Stay ahead of culinary trends and suggest exciting menu changes that reflect local, seasonal, and national flavors. Your ideas will keep our offerings fresh, vibrant, and competitive.
• Precision and Quality Control : Oversee the meticulous preparation, seasoning, portioning, and presentation of all sushi dishes. Ensure that each plate meets our high standards and exceeds guest expectations.
• Operational Excellence : Assist in budget management, streamline preparation procedures, and maintain rigorous safety, hygiene, and sanitation standards. Your focus on detail will ensure a seamless and safe kitchen environment.
• Team Collaboration : Work closely with Chefs and staff, fostering a culture of teamwork, continuous improvement, and passion for perfection. Support your team in achieving optimal quality while managing costs effectively.
• Compliance and Safety : Vigilantly monitor and enforce all health, safety, and sanitation regulations. Ensure that our restaurant adheres to all relevant laws and company policies, maintaining a safe and compliant work environment.
• Dynamic Involvement : Attend meetings, participate in training sessions, and stay engaged with the latest industry trends. Your ongoing learning and proactive involvement will keep us at the forefront of the sushi world.
