About Eckhart Beer Company:

Eckhart Beer Co. is a new, 8000-square-foot brewery and taproom in Brooklyn, specializing in European- style lagers. With an expected fall 2024 opening date, Eckhart will bring the best of the European lager beer tradition–from raw ingredients, to brewing process, to hospitality–to the heart of Brooklyn. Eckhart will embrace a “narrow-but-deep” approach to the craft brewing movement, featuring a small range of beers but focusing on perfection, tradition, and authenticity at all levels. Eckhart will have a fully built-out, 100-seat taproom with a full kitchen, and we intend to create a welcoming and convivial space that is a destination for casual beer drinkers and aficionados alike.

Who we’re looking for:

Eckhart Beer Co. is looking for a Head Chef to build and run a food program that will complement our world-class beer offerings. Eckhart’s owner is a veteran of Michelin-starred kitchens in New York and San Francisco, but envisions a tight menu of simple but well-crafted dishes that can be produced easily in volume and served in a casual setting. The ideal candidate will be a chef who understands that delicious food doesn’t need to be fussy, just made with care and attention, and who can handle a high-paced service environment with focus and equanimity. Responsibilities:

  • Menu and recipe planning and development, in collaboration with the owner
  • Hiring, training, scheduling, and management of all kitchen staff, including sous chef(s), dish team, prep team, and line cooks
  • Adherence with DOH regulations–maintaining an A Sanitation Grade
  • Quality control of every dish that comes out of the kitchen
  • Sourcing, ordering, and inventory control for all foodservice ingredients, insuring proper product rotation to minimize waste
  • Maintaining equipment and facility, and alerting ownership or Taproom Manager of any necessary repairs
  • Maintaining the cleanliness and organization of all foodservice areas
  • Costing recipes and meeting food and labor cost benchmarks
  • Participating in training of FOH staff on the menu
  • Developing menus for festivals and special events
  • Working closely with service leadership to ensure optimal food service experience for guests
  • Expediting service and working line stations as necessary

Qualifications:

  • At least 3 years experience in an Executive Sous Chef or Chef de Cuisine position
  • An excellent palate; a fine sense of balance and seasoning
  • A positive attitude and a patient and enlightened approach to management
  • Fastidious and uncompromising sanitation standards
  • Strong organizational skills and adaptability
  • Experience managing labor, purchasing, vendors and quality control
  • Track record of consistent and stable prior work experience in the restaurant industry\
  • Excellent working knowledge of food preparation techniques, equipment, and standards
  • Able to be organized and productive while working meticulously in a high-intensity kitchen
  • Able to take direction and coaching from ownership
  • Able to effectively, calmly, and empathetically provide direction and coaching to kitchen team
  • Broad availability to work AM/PM service as well as prep and production as needed
  • Proficient in all standard ordering, inventory, POS systems, Microsoft office, and computer functions
  • Experience in managing DOH food safety standards and policies required to get the “A” grade\
  • Experience in following all NYS labor responsibilities, laws, requirements, regulations and policies
  • Must be able to stand, lift and bend for extended periods of time and lift up to 50 lbs
  • Must have an active/valid DOHMH Food Handler’s Certificate

Compensation:

Salary, $80,000-$90,000/year. Benefits: Health Insurance, paid time off, potential performance bonuses
